Day 90 - The 13th weigh in looms...........

Another Friday has come and gone..... the Fish & Chips have been served, we stink of cooking oil and once again its been an excruciatingly hot day. One small consolation....., we are home before midnight!

For once I am quietly confident about the morning's weigh in, which probably means that I have gained weight! In all seriousness, I feel much lighter today and I even manged to glance at the mirror this morning to check out my new shape. I can definitely see a difference. Even if I have put weight on, I will not worry as I 'know' I am 'lighter'. I have just eaten some toast adorned with sliced Spanish omelete, (at midnight), so that may effect the result...................

Its been a long week both physically and mentally and its ended on a couple of sad notes. A very good friend of ours tragically lost her husband yesterday and another good friends mum passed away today, so our thoughts go out to them........

I'm going to let my toast digest a little, watch Eastenders and then have a little pre weigh in swim before I go to bed, so I will leave you all now and report the results tomorrow. Day 89 - feeling thinner!

As most of you will know, even though I am consistently losing weight and I fully believe in my methods, I never really feel confident as I approach Saturday's weigh in. This week however, I feel thinnner! I dont know why, I just really feel like I've lost weight. My only worry is that when I feel like I've put weight on, I have always lost. Lets hope it doesn't work the other way around!

A profitable day both upstairs and down today and another scortcher. I find myself whinging about the temperature every day at the moment, but it does feel ridiculously hot. I dont remember it being this hot at the end of June last year. The outside temperature today hit 40 C.................

I managed to stay away from the downstairs cafe kitchen today as I was upstairs prepping for tonights service. It is still incredibly hot up there, but not a patch on the 50C temperatures of downstairs.

I decided to make a Russian salad of potatoes, peas, carrots, mayo, tuna, green beans and boiled egg. I really like it, but it didnt seem to go down that well tonight. In fact, I remember doing it a couple of weeks ao and it wasnt particularly popular then either. I will use whats left for Saturday's salad bar, but if not popular again, I will try something else. The potato salad is always popular, so I could put that on all the time, but I hate playing safe! I like to offer people something they wouldn't normally have or something they've never had before. Another salad bar choice tonight was cous cous with chargrilled vegetables, mint and coriander. It was delicious (if I do say so myself) and proved to be quite popular. I completely forgot to photograph my creations for you, so I will try and remember to do that tomorrow and post them on day 90's blog! Choice 3 was a 'simple', rustic coleslaw made with cabbage, carrot, onion, mayo and wholegrain mustard. I like for it not to be too mayoey, (now there's a word!), but at the same time, not too dry. As I said earlier, I will post some pictures tomorrow to show you what I mean.

We had 22 in tonight and unfortunately lost a potential 5 more as we had to tell them there was about a 30 minute delay. This was a direct result of most of the 22 arriving within 5 minutes of each other! Its a shame to lose customers, but I would rather be honest and tell people the truth than upset them. I also feel that if you have booked your table in advance, you shouldn't have to wait. Its a difficult juggling act sometimes, but we learn a little more every day. Sometimes, whatever you do is wrong.

More excellent comments from the diners and some pretty good tips too! Also manged to get home for 11pm, so a good night all round.

Day 88 - Has it really been that long?

Popped to Harrison's school today to have an end of term chat with his teacher. She was very impressed with his progress and told us he was a lovely boy. Proud Daddy!

Work was pretty boring and the madness of the last couple of weeks seems to have abated. At least if I'm bored tomorrow I can go upstairs and prep for the evening service. Got 3 tables booked for the 'All you can eat Steak, Ribs, Chicken etc' so at least we know there will be a few in. I've got a surplus of mushrooms, so I feel a soup coming on.......... I'll take the usual pictures of my creations for you tomorrow.

I had quite a nice dinner tonight. It was ravioli stuffed with parmesan and rocket drizzled with some olive oil and fresh oregano and a few extra shavings of Parmesan..........

Day 87 - 'I poured a teaspoon of water under my erection'........

Crazily hot day in the kitchen again today, but hey, we just have to get on with it. A slow start to the day meant that I could 'experiment' a little with breakfast. Nothing too scientific, just how to cook a whole portobello mushroom without using oil or an oven! I could have just sliced it and cooked it on my plancha (a Spanish hot plate), but I always do that and where would the fun be? So, I decided to place it upside down on the plancha and cover it with an aluminium bowl to steam it. I poured a teaspoon of water underneath my erection, (I'm such a child), in the hope that it would have a steaming effect. I use this method when topping a burger with cheese as it helps the cheese to melt. 5 minutes later I was rewarded for my idea with a cooked portobello mushroom. Weyhey! I shoved some scrambled egg on top and served it with some rocket leaves and a griddled tomato. Some of you may wonder about the use of salad leaves for breakfast. I think the pepperyness, (is that a word), of the rocket works really well and I also think that rocket and cress are very similar in flavour. If egg and cress works well, why shouldnt rocket? I enjoyed it anyhow. I'm starting to notice an Italian influence in my food presentation as most things I put on a plate seem to have red and green in them and with all my plates being white............ well here's what I mean......


By the end of play we had had another fruitful day at work and headed off to the outskirts of Benidorm to stock up on some needed items for the cafe. Took Harrison with us and made the customary trip to MacDonalds for him. I managed great restraint and only pinched 8 chips off his tray! I even had a water!

That was basically my day today, so I will leave you all alone for now, until tomorrow!

Day 86 - The morning after the night before!

I will start with yesterday's events as I could only manage a pathetic attempt at a blog last night! The morning started early as always on a Sunday with the prep for the afternoon's roast. One of our friends sons ( Jamie) had expressed an interest in learning how to cook, so I said he was welcome to come in on a Sunday and see what it was all about. He is only 11, but incredibly mature for his years. I dont think I've ever had so many questions thrown at me in the space of 6 hours before! Bless him. I admire his enthusiam and he is welcome back anytime. He also did a great job serving the gravy!

It was a pretty busy service, but I was a little disappointed that only 6 out of 34 diners ordered my terrine. It really was top drawer, tasty and looked amazing served with cornichons, pickled onions and a rocket salad. I forgot to take a picture of the actual plate presentation, but here's the finished terrine......

I just wish that some of the 'traditionalists' who eat the same thing EVERY week and NEVER try ANYTHING different, would one day just try someting a little out of their comfort zone...... My frustration continues.....

Talking of frustration, we were invited out for a drink by our friends Victoria & Ian (Jaimie's parents) to watch the England game. Another pile of shite! Penalties or no penalties, we're just not good enough......... There was a positive however...... We went to a restaurant called 'La Picaeta', which hasn't been open for very long and ate some really good tapas. For those of you that are unfamiliar with the type of food served in a typical Spanish seaside town, let me tell you that 90 percent of it is commercial tourist rubbish and overpriced. There are exceptions to the rule, but they are few and far between. The food last night was exceptional. We were treated to some inventive, beautifully presented food at ridiculously inexpensive prices. There were 2 dishes that stuck out for me. One was goats cheese, caramelised onion, Serrano ham and balsamic syrup on toasted bread at just 1.95€ and the other was incredibly tender steak, onion, melted cheese and foie gras at just 5.50€. Incredible. Had a very good evening, thank you Ian and Vic. Finally got home at 3am and thats the reason for my pathetic attempt at a blog last night!

We felt it this morning having only had about 4 1/2 hours sleep and Laura was in a pretty bad way when we first arrived for work, although she did improve as the day went on. At one point she fell asleep on the floor behind the bar! I have posted a photo on facebook, but I'm sure she would kill me if I posted it on here! Fortunately, it was a slow start to the morning so we didnt have too much to do early on.

Got home, had a swim with Harrison and fell asleep watching Spongebob for half an hour!

Day 84 - Result from the weigh in!

The end of week 12...... Wow, where did the time go?....................

Tentatively, as always, I stepped on the scales at Heather's this morning, fearing the worst. I needn't have worried. I lost 3 pounds! Soooooooooooo pleased with that. Really thought I had put weight on.
So, after 12 weeks I have lost exactly 2 stone and 7 pounds, or 35 pounds, or 15.87 kilos! Gotta be chuffed with that. If nothing else, it's a reminder that what I am doing must be working. I may regret saying this soon, but as yet, in 12 weeks, I haven't put any weight on. I have also reached the milestone of being 17 stone something. OK, it's 17 stone 13, but it's 17 stone something, and when you started at 20 stone something, it makes you feel good! Roll on next week....

Not such a busy day at work today. The cafe was okay during the day, but a very quiet evening service, with just 4 covers. One day I'll suss this restaurant lark out........ or, maybe not!

So for now, its bed for me as I am up early for Sunday lunch prep. I have a young lad coming in with me in the morning. He is the 11 year old son of one of our friends and when talking the other day, he asked if he could come in and try and learn a little about cooking. Bless him. Of course I said yes. I hope he really gets into it as he seems a bright and genuinely interested kid, but I know he is a very fussy eater, so I am going to try and educate him in that department as well. We will see how it goes...

I will return tomorrow with pictures of my completed terrine and tales of the days events.

Day 83 - Really have had enough of this heat......

Friday has come and gone again, (well nearly, its 11.30pm), and I am sitting here typing this, wondering how much weight I will have gained this week! I know this happens EVERY Friday night and I am yet to gain any weight on this journey, but I always feel like I have gained. Especially on  a Friday night! We shall see in the morning...........................

As you can probably guess from the title of todays ramblings, It was STUPIDLY hot at work again today. Why am I surprised? Its June and I live in Spain! Anyway, I took a picture of the thermometer in the downstairs cafe kitchen just to give you an idea of what I mean......

Ridiculous!

Another profitable day though, both downstairs in the cafe and tonight in the upstairs restaurant. I managed to cook my terrine tonight and I have stuck it in the fridge with a weight on top. The weight is a plate with tins of mushy peas on top! It should set perfectly for Sunday. I think I will serve it with a rocket salad, some seeded brown bread, some gherkins and maybe some baby pickled onions. Think it might benefit from a little balsamic syrup as well, so will try and incorporate that somewhere in the dish. Nothing else to say really, except wish me luck for tomorrows weigh in and I will speak to you all again tomorrow. Day 82 - Another ridiculously busy day & night. Why did I have the 'all you can eat' idea!

Ok....its nearly 1am and we've only just go in from work. Why did I have the 'all you can eat ' idea!! Financially its a good thing, but bloody hell its hard work. Its not just the nights work, its all the prep in ridiculous heat before hand and all the cleaning up afterwards. Its the stripping all the table cloths and getting them home, then sticking them on a wash so that they can be hung out and dried before tomorrow nights service etc etc...... Its never ending! We already have 27 booked for tomorrow night and we usually get a lot of bookings during the day for the night................... Its all playing havoc with my eating habits.......... Once agian I have no confidence in Saturday's weigh in.

I made some very nice food today and took some photos to show you all, but left my bloody phone at work! So you will have to wait until tomorrows blog for the piccies, sorry! I made a really nice minestrone soup for tonights service, (it will be for Saturday night as well and will taste even better then) and I started preparing a pork,beef, asparagus, sage, thyme & apricot terrine for Sunday lunch. I have pictures of both for you tomorrow............... Ha ha, Laura has just found my phone! It was here all the time! Here is my terrine...........
 
I will upload some pictures of the finished product on Sunday.......

I also had a little fun with some char grilled veg, mint, pasta, lemon juice and olive oil and decided to use it as one of the options for the 'salad bar' at work. The whole lot went!! Here it is.......


I need to go now as Laura needs some help cleaning the house, (yes, at 1 am), as there are people coming to view tomorrow. I also need some sleep!

Days 79, 80 & 81 !!

Firstly, I must apologise for my lack of blog for the last couple of days, but I have just been shattered. Physically and mentally drained from the events of the last couple of days..........

I will start with Monday.............. It started with a trip to the town hall to discuss the fact that a pedestrian crossing has been 'dumped' outside our door. Not such a big deal I hear you say........ It is when it means that the pole that suppports our awning has to be moved, (even though it cant be), and 50 percent of our outside seating has to go................... All this just after they put our pavement tax up to 2,500€ !!!!!  In case you missed the photo of the situation that I posted the other day, here it is...

A pretty stressful 2 hours spent on our 1 day off in 14. All this while we are trying to organise Harrisons party that starts at 5pm!

Managed to get the last few bits and pieces done for the party and fly home to get everything sorted before the kids arrived! We had decided to have a pool party as it was cheaper than hiring entertainment, and a BBQ cos it was the easiest food option! Laura and family friend Sharon managed to inflate all the rubber rings and put up all the decorations etc, (I would have called them inflatables, but I'd just used the word 'inflate'!) and I did the easy bit,........food prep!

At 5pm we opened the gates and in they flooded! 4 hours of about 20 or so 5-6 year olds in the garden! It was exhausting just watching the little buggers! We let them run around, have a swim and tire themselves out and then we fed 'em! A few pictures below to help you get a feel of the events!....
 

 

 

For those of you who dont know, the last picture is of me, Laura & Harrison! (I'm the one on the right!)

By the time the kids had gone, Harrison was in bed and we had tidied up, it was nearly 11pm. Did I want to sit down a write my blog? NO!
I desperately wanted to have a swim as it had been a pretty muggy day, but then realised that there was probably about 3 gallons of kids wee in the pool, so decided to late the filtration system do its job overnight before diving in! What a day!!!!!

On to Tuesday..................

Spent the whole day prepping for a 50th birthday party in ridiculous heat! I went upstairs to the restaurant kitchen at about 10 am and at 4.15pm I came out! Even with the fan on it was stuipidly hot! Spent alot of the afternoon trying to keep this little baby cool....

Couldnt put it in the fridge, so had it on top of one of one of the freezers with a fan blowing on it! Things we do eh! Thanks for your help with the cake Laura and Jayne...

Managed to get all the prep done, so popped home for an hour to have a quick dip in the pool, (by this stage I didnt care if it was still full of kids piss!) and have a few minutes with Harrison before going back to work.

Jillian and her 40 guests arrived for her surprise party, (even though she sussed that day where it was, so not really a surprise!), and were 'treated' to a Steak, Ribs & Chicken fest. They all seemed to enjoy it and I hope if you're reading this Jillian that everything was ok and you had a really good time ..... Got home at midnight, had a quick dip in the piss and settled down to watch England v Ukraine that I had recorded earlier. What dross............... it finished at about 2 am. Was I in the mood to blog? NO!


So 5 hours sleep and its Wednesday (today)!

Woke up, wished I hadnt stayed up to watch the crappy football last night and took Harrison to school. Then popped to work to open up before heading back to school to see Harrison 'graduate'. It sounds very posh, but all it was was just him receiving a certificate type thingy to say that he had finished infant school! We were also subjected to a little school 'play'. Dont get me wrong, I love my son to bits and last years affair was really good, but this year........... shite! Not only was it shite, but the room it was held in had no air con and we were squashed up like sardines on childrens school chairs! I pity the lady to my left. I must have shifted over 100 times and I'm sure a bead of my sweat landed on her toe!!!!!

After the 'show', it was back to work for another profitable day. Its been a really good week financially for us so far. I wonder if summer is finaly here...........

I'm going to go now as I still have loads of stuff to do tonight and its 11.30pm. Sorry to desert you all for a couple of days, but I've caught up now and we're bck on track. I made some home made burgers with some left over rump steak on Sunday and froze them, so going to have one for dinner tomorrow night as we also have burger buns left over from Harrisons party!  I dont normally agree with freezing anything, but I find its easier to cook burgers from frozen as they dont break up as much... I'll let you have the full details tomorrow

Day 78 - Another Sunday Lunch

The day started early as Sundays always do and we arrived at work at about 9am. The ovens went on, the meat came out of the fridges and away we went....

As always, Laura makes the cheese sauce for the cauliflower and the batter for the Yorkshire Puddings while I get on with all the meat prep etc.  I had scored the fat on the belly pork last night so just needed to rub some salt into the cracks and all over the skin and get it to room temperature before cooking. The beef just needed to come out of the fridge and also get to room temperature. I placed the gammon joint in a pan of cold water and brought it to the boil. Once the water came to the boil I skimmed off the gooooey stuff and turned it down to a simmer. After 2 hours, took it out, trimmed off the fat, poured honey all over it and then brown sugar. Shoved it in the oven for 30 mins and voila.........

The belly pork went into a stupidly hot oven for about 30 mins and then at 170C for 2 1/2 hours. I always put some water in the roasting tray when cooking belly pork. It needs topping up from time to time. (If you were making gravy from the pork, use white wine instead of water).....


The beef is sooooo easy. Just place the topside joint in the oven at 200C fro 20 mins, then reduce the heat to 180 and cook for a further 1 hour to an hour and ten mins (3.5 kilo joint) if you like it looking like this.....


If you like it a little less rare, leave it in fo r another 15 mins......

It was a weird feeling for us this mornig as we only had 6 bookings. Normally we are in the high 20's with people also just turning up on the day. It felt strange to think that I was cooking all that food for just 6 people. I needed have panicked as we ended up with 30! A stupidly hot kitchen again, and so nice to get back home and hit the pool! I'm off to bed now as its another long day tomorrow opreparing Harrisons Birthday party at the house. I have copped out a little with the food as I'm just going to do a simple BBQ of burgers, sausages etc and a big salad. There should be about 20 five year olds turning up with their parents at about 5pm, so I thought a barby would probably be the easiest bet. Its also an excuse not to have to mingle too much with the parents, as my Spanish isnt great!

Day 77 - Results of the weigh in and other stuff.....

It's nearly 1 am and I have just returned frorm work. What a day.................

It started with my weekly trip to the 'Beauty Box' for my official weigh in and I was very chuffed to have lost another 1lb. That's a total weight loss of 2 stone 4 pounds in 11 weeks. An average of just under 3 lbs a week. My next target is to be 17 stone something and I am only 3 lbs away from that, so if I can have a really good week, I may hit it next Saturday. ;0)

Straight to work after the weigh in, and as soon as I had poured myself a coffee, BANG, the floodgates opened. It did not stop until about 2.30pm when I flew upstairs to prep for tonight. Finally fininshed at about 4pm and raced home to spend a hour with the little man before heading back to work.

Work was okay tonight. We ended up with 18, so again another good turn out for the 'All you can eat menu'.  Again, we had some excellent comments from the customers and one even said that my potato & leek soup was the best soup he'd ever tasted. Obviously a fine judge of food! Apart from getting in at nearly 1am, a decent nights work. Thank you to Gemma and Julie, (I know Gemma will be reading this to you at some point Julie), for their stirling efforts as always, if it wasnt for Julie's efforts at the sink, we'd probably still be there now!

Im going to go to bed now as its up early again in the morningn to prep and cook Sunday lunch. Thank God that at about 5pm tomorrow afternnon it will all be over and no work again until Tuesday! Its our 1 day off every 14 days. Although we have Monday off, it will be spent arranging, hosting and partaking in the little mans birthday party, so really going to work would be the easier option. Its not actually his birthday until July 27th, but in Spain, if you dont have the party during term time, no bugger turns up, so if you want your child to get loads of presents, you have it during term time ;0)

Day 76 - Phew, what a night........

Well its 1.45am as I start to type this and I have to be up at 8am for work, so I'm guessing it wont be the longest blog you've ever read!

We had 40 (yes 40) booked in tonight for Fish & Chips and we ended up with 44. It was a little deflating to have to turn about 12 more people away, but unfortunately we just couldnt fit them in. Lots of lovely comments about the food again, one from a former fishmonger who said its the best Fish & Chps he's ever eaten. Gotta be pleased with that.

Got home at around 11pm, had a quick swim and settled down to watch the England game that I had recorded earlier. Although a decent win, I'm still not convinced! I could go on for hours about the way England play, but I'm guessing the majority of my readers are female and they probably don't wanna hear it!

So on to tomorrow and the 11th weigh in. Cant believe it will have been 77 days. It really has gone quickly. As always, I am not confident about the outcome as I feel heavier than I did last week, so I reckon I've put on a couple of pounds. If I havent, I'll be pleasantly surprised. If I have, I will need to step it up a gear. I'll let you know how I get on.

Its 2am now, so I'm gonna hit the sack. Sleep well all and I will update you tomorrow with news of the weigh in

Day 75 - An amzingly tasty recipe for you........

Its Thursday.......'prep day'. A day when I can leave the chip fatty smell of the downstairs cafe and head upstairs to the relative 'rose garden' of upstairs!

I was quite chuffed with myself today. Without sounding like a big headed, egotistical tit, I know I can cook, but sometimes I create something that makes me think to myself..... 'Jimbo, that was different class'. I wanted to do something a little different for one of the main courses on the 'Menu of the Day' and as my passion is Italian food, I decided to make a curry! Only joking! I decided to make a peasanty type, rustic, Tuscan style pasta dish. Very simple in its concept, but with bags of flavour. To me that is the essence of good food.

I have a very strong feeling that this is going in the book, but as I value all my readers , I will allow you this recipe for free!  Here it is......

 Start by browning some 'country sausages' over a medium heat. You can use any sausages for this recipe you like. If you are watching the calories, you could try chicken sausages or similar. At this stage, you are not cooking them completely, just getting some nice colour. When browned, remove from the pan and set aside. Then finely dice an onion and gently sweat it down until it becomes translucent. At this point, add the sausages back to the pan with some fresh sage leaves. I used about 15 smallish ones. Turn the heat up to full whack and add a good glass of red wine. Something Italian makes sense. Burn off the alcohol and add a 400g tin of tomato passata. Do not discard the tin! Fill it with chicken stock and pour that in too. I always add a little sugar to tinned tomatoes as they can be quite bitter. Bring the heat down to low to medium. At this stage have a little taste and season with salt and pepper. I also add some fresh oregano. Cover with a lid and let it simmer for about 30 mins so all the flavours can really get going. After about 30 mins, remove the lid and reduce the sauce until you have the consistency you want. Remember, you need enough sauce left to coat the pasta. While your sauce is simmering, cook the pasta of your choice. Different shapes of pasta are made for a reason. Choose one that will hold the type of sauce you are making.

Thats it, that simple, that tasty! I have listed some pictures for you to have a look at.....
 
  I have to say that its one of the tastiest pasta dishes I have ever cooked. If any of you try it, I would love some feedback from you...

While prepping, I also made some 'pimped up' potato salad made with , peas, carrots, green beans, softened spring onion, bacon, oh and potatoes. Here's a piccy.................


It was another okay night for the 'all you can eat buffet', we had 16 in, so cant grumble. A picture for you of a platter of food for 1 person..........

I didnt manage to do a video today, people kept coming into the kitchen everytime I started setting the camera up, so another time!

Day 74 - Quiet day at work.......

A quiet day at work today, so again I dont have much to say today. It worries me a little that people may lose interest if I dont have something funny or intresting to report. I was talking to someone today who told me to make something up to make the blog interesting. I cant do that. Whats the point? This blog / journey is about exactly that, my journey. I have said before, there will be highs and lows, boring days and interesting days. Some blogs will appeal to some readers and some to others. But whatever happens, I will keep it real.

So, with that in mind, all I can tell you is that tomorrow I have about 4 hours of prep to do for evening service, so I can furnish you with details and pictures of my creations etc, and I'm hoping to possibly attempt my second video! Whoo hoo! I may even put my voice on this one! Knowing me though, I'll probably bottle it and say nothing! I think I may use 1 or 2 of the recipes for the book, so you will get an 'exclusive' too!

Day 73 - We got the house!!!!!!!

Woke up this morning with a little knot in my stomach, wondering what the news would be about the potential new house. I needn't have worried. We got the house yipee! I cannot describe the incredible weight off my shoulders. I can relax a little now....Phew. Thank you to Melissa & Gary, we will take very good care of it for you.............

Work was okay again. It seems to be picking up a little. Nothing really to report though.

I dont really have much to say today really. I'm just soooooooo chuffed about the house.

Rather than spout drivel, I am going to go now as I have tonnes to do, but I will try and give you something more interesting to read tomorrow.

Day 72 - I invent 'creamy' pasta at under 500 calories!

Here we are, Monday, Day 72. Some positive news on a house for rent! Its perfect, its within budget, but we are waiting on a phone call tomorrow/Wednesday to confirm if it will be available. There are a couple of problems that need to be sorted first. We will see......

Work was pretty ok. Fairly busy today for a Monday. In fact I hadnt even finished putting the chairs and tables out and people were sitting on them! I hate that! I like to get into work, have a coffee, sort my kitchen out, get everything ready and then they are allowed in! How dare they spoil my routine...... It was even hotter today than yesterday. I suppose I will just have to get used to it for the next few months.

I have been pining for a creamy pasta dish for the last few days, but obviously do not want to spoil my hard work, so I set about making a low calorie alternative today. Here it is.....


300g Fusilli pasta                        (1050 calories)
100g Low fat cream cheese        (150 calories)
200ml Chicken Stock                  (15 calories)
1 onion                                         (50 calories)
100g garden peas                        (80 calories)
100 ml fat free milk                     (40 calories)
200g Mushrooms                        (40 calories)

4 portions.......total calories 1425
Calories per portion approx 350

I'm very chuffed with this dish as it tasted pretty damn good. Its obviously not as good as using cream, but using cream got me to 20 stone!

Try it yourselves, you'll be surprised how good it is. Make sure you season well......

Day 71 - Sunday Lunch

Another stupidly hot day in the kitchen! Temperatures outside were in the low 30's, but the kitchen was in the low 40's. For any fellow chefs out there reading this, you know how I felt!

Service was good, if a little less than we we would have liked, but still had 26. I think its getting too hot at lunch time to eat a full 3 course roast. I also notice that some of the 'wintery dessets' i.e, crumbles and bread & butter pudding etc are becoming less popular and desserts like 'Eton Mess' and Cheesecake are selling out. Its gotta be a heat thing..........

Sold out of lamb again, which is heartening, however I did manage to stash a little away for our friend Sharon whose birthday it was today, (Happy Birthday Sharon). She had expressed an interest in it on Friday when I posted a picture of  it marinading, so I thought the least I could do would be to save her some. Not sure if she liked it yet as I havent heard from her since giving it to her. Got excellent comments from the diners again today, which gives you lift and sense of achievement after all the hours of work you put in. It makes the hot, sticky day seem a little less stressed. Managed a little swim this afternoon and am going to try and step it up this week as I desperately want to be 17 stone something on Saturday! I need to get back and focus on the eating plan and start creating some 'interesting food'. I think I'm goiong to try and create a lowish calorie 'creamy' pasta. 'Creamy pasta' I hear you say...... It can be done,...watch this space.....

Day 70 - Result from the weigh in

Well, I got weighed this morning and managed to lose another 2 lbs this week for a total weight loss of 2 stone 3 lbs, yipee! Its slowing down a little now, so I will have to step things up a bit methinks. I need to drink more water and up the swimming. Although I swim every day and sometimes twice a day, I think I need to push harder. I'm hoping to lose 4lbs next week so that I will be 17 stone something. Its the next milestone..............

Another house fell through today! Well it didnt exactly fall through, it was just ridiculously expensive and way over budget. So we are still looking. Time is ticking away........... Something has to materialise soon or Laura will get her wish and sleep in the tent we have had for ages!

Another heartening night at work. We managed 20 covers . I think a lot were tourists, but all custom is good custom. Not sure how long this influx of punters will last, but we will make the most of it while it does. Managed to get all the prep done for Sunday Lunch as well, so all in all, a pretty decent day.

Got 20 booked so far for Sunday Lunch, so hope to get a few more bookings in the morning. I'm looking forward to cooking the slow roasted lamb, (see lasts nights blog), and gonna be interested to hear the customer feedback. I think its gonna be pretty damn good. While I'm singing my own praises, I have to say the mushroom soup I made for tomorrow tastes bloody lovely too!

I've gotta get to bed peeps, its 2 am and I need to be up at 8 o'clock. If you say that quickly it sounds like 'I need to be a potato clock!' On that note, I'm off

Day 69- (is it just MY schoolboy humour that finds that funny)!

Its Friday, day 69 (snigger) and tomorrow is weigh day! I'm hoping for a good result as I feel much lighter and thinner this week, but the scales are funny things sometimes. I have been getting some nice comments from people that I havent seen for a few weeks, so its nice to know that people are noticing.
I have had 2 swims today and I will try and get up early enough in the morning to have one before I get weighed. We shall see......!

Work was hot, sticky and stop start today with a decent return at the end. The road works seem to have finished outside for now, so it was also quite a peaceful day too! The zebra crossing seems to be staying for a while, which is hilarious seeing as though there is a tree right in the middle of the exit and 2 of our 4 chairs and tables from the cafe are also in the way. I wonder how long it will stay like that. I have taken a picture to try and give you an idea of what I mean! Notice the seating area on the other side of the road as well... Madness!


A little drama unfolded today in the sleepy coastal resort of Calpe. There was a pretty serious forest fire about 1/2 mile from where we live. Not sure how it started, but its still going on now after about 15 hours. Fortunately the wind changed direction and its moving away from us now.....phew. As we drove home this afternoon, we could see huge plumes of black smoke behind where we live and we enjoyed watching the planes and heicopters dropping huge amounts of water over the flames! Great to watch, but a little close to home for comfort. Here's a picture of the fire and one of a plane heading towards it to drop some water........

I decided to marinate Sundays lamb tonight. My thinking being that the longer it has to marinate, the fuller the flavour. Looking forward to tasting it on Sunday. Gonna make some mushroom soup as one of the starters and I must remember to take out some for me before I put the cream in this time!

Day 68 - I get quite philosophical tonight............

Its 11.50pm and I've just got in from work. Pretty busy tonight (27 covers), but I'm still not sure if its the 'All you can eat' thats bringing them in or whether its just a coincidence that we have started getting busier since we introduced it.....? I seem to remember having a busy end of May, beginning of June last year...... Time will tell. For the moment I will revel in the fact that it was my idea and I shall take all the credit for it!

So, I had a monthly check up at the quacks this morning and was Rosa Anna pleased with me! Teachers pet methinks. Told me she was amazed at my weight and girth loss and I should keep going. At least thats how I translated the Spanish! Joking aside, she was very pleased with my progress. I have lost 13 cm around my waist and my blood pressure has gone down from 145/90 on April 1st to 130/80 today. My sugar levels are fine (82) whatever that means and she has made an appointment for me to come back in a month. Just checked Google, and 82 for blood sugar is 'normal'! Yipee, I'm normal...., well, sort of!

I feel thinner this week! Last week I felt fat and thought I'd put weight on, but I feel thinner now. I can definately see it in my face, (I'm down to 11 chins now), and my belly is smaller. I hope the scales reflect this on Saturday morning! It is possible that I will not have lost any weight as I am gaining muscle, but I hope to have lost a little. I would be nice for it to be about 6 lbs as I would hit the 17 stone something mark, but I think nearer 2lbs. We shall see!

I havent been eating anything exciting over the last couple of weeks, hence no pictures, but I have been following the remit, so I'm on course. I firmly believe that I have 'changed my eating habits'. I dont do the things I used to do and I eat much differently now to 2 months ago. I eat 'the good stuff' now as a first thought and to be honest, I dont have 'the bad stuff' in the house anyway. I think that confirms my old habits are gone. Its not a case of me going back to bad habits, I just eat differently now. But now has become the norm. Does that make sense? I just read it back and thought 'what'? You get the drift (I hope). There is still a huge way to go with the weight loss and fitness, but I KNOW now that for the first time in my life I am in control of what I eat and food is not in control of me. As I stated initially when I undertook this journey, I have been on most diets and they all work......until you come off them. Therefore that would mean that either a) you would need to stay on the diet for ever or b) you would need to change your eating habits or you simply put the weight back on. The reason that you put the weight back on is because you revert to the habits that made you overweight in the first place. Change the way you eat. Change what you eat and change you life. If I sound like I am lecturing, please remember that I am still about 5 stone overweight, so I have no right to. I am simply trying to get across the mindset I am now in. It is a simple theory, not a gimick or a faddy diet. It has worked for me so far. I have publicly put myself on show and if I fail I will look like a complete plonker, but I can truthfully say that I know I will get where I want now. I am hoing to achieve it by the beginning of April next year, but if it takes a little longer, thaan so be it.

After all that drivel, I will leave you all alone now and watch my recording of Eastenders before hitting the sack. Sleep well all and speak to you tomorrow

day 67 - A trip to the quack in the morning for an update

Here we are again! Wednesday has come and gone and I'm looking forward to seeing the doctor in the morning for a progress report! Its nice to be weighed every week by Heather at the Beauty Box, but its also nice to get exact weights and measurements done by the quack. She was very happy with me last time I went, and its been about 4 weeks, so she should have nice things to say.....

Work was work! A pretty busy day all round. The workmen have almost finished the noisy part of their duties and the road is nearly done...Yipee! Cant wait to tell you all about the zebra crossing they have put right in front of where we put our chairs and tables that we pay 2,500€ a year for. There also a tree in the way as well. Viva Espana!

Bad news AGAIN on todays house.....far too expensive. We do however have a viewing tomorrow afternoon at 3.15.pm. As always I will keep you informed! It'll probably go wrong though.....

I'm off now. Not much else to tell you so I will furnish you tomorrow with details of my visit to the doctors.

Day 66 - A busy Tuesday at work and a Versace modelling shoot.....

After yesterdays drab and non profitable day, today was a slightly better affair. Steadily busy, (I just typed busty and it made me chuckle), and a decent total at the end of the day. Also, some fairly positive news about a possible new place to live, I think! Just waiting for a lady to get back to us in the next couple of days regarding availability. You must all be thinking 'how hard can it be to find a house for rental?' Trust me, It aint easy here in Calpe. If you want an appartment, they're everywhere, but houses, villas etc, nada!

The work men are slowly getting the roadworks finished OUTSIDE OUR DOOR so in a couple of weeks we should have peace, quiet and posh new road. Until that is, September 15th when they will be digging up all the pavement OUTSIDE OUR DOOR as well! The local town hall think thats the best time to do it. Dickheads...... ITS OUR BUSIEST TIME OF THE YEAR! Morons........

Until then, we carry on doing our best and see what happens.......

I havent really had my creative cooking head on recently, so dinner tonight was an empty the fridge and use up what you can type affair.... It ended up as some pasta with tomato, spring onion, croutons, Emmenthal cheese, white wine vinegar and a little balsamic. It was ok. Here it is........

I really must start to create a little more, but there's so much going on at the mo that sometimes I just dont get round to it. It sounds a bit like a cop out, but I'm trying to write a book, write a blog, I average about 60-70 hours a week at work, I write recipies for local newspapers and magazines, I do all the advertising and marketing for work, I have a food page on Facebook, I am swimming as often as I can, I have a 5 year old son, I am a fashion model and a high class escort. Well, everything apart from the last two!

I'm off now as I'm needed for a Versace shoot in the morning, so I will bid you farewell and speak to you all again tomorrow!

day 65 - A pretty quiet Monday, apart from the house falling through!

Monday is here again, and a quiet and dull one really. Not much happened at work, the workmen are still doing their thing and its STUPIDLY hot. That's pretty much it......., apart from some crappy news about the 'new house'.........

Its not the new house any more! Apparently the old lady who owns it has changed her mind and now does not want to let it. C'est la vie, maybe it just wasnt meant to be. So the search continues........

I've had a couple more recipe ideas for the book, so cracking on with that. Not a clue how many recipies to put in etc, but will just suck it and see. I'm going to try and combine a little humour, a few recipes from 'the Journey', some recipes of mine that I have 'invented', some of my favourite things to eat and a few stories from work. I'm hoping that it will all blend nicely together and be intresting reading!!

As there is no much to blog about tonight, I will bore you no more and hopefully have some news for you all tomorrow. Its not easy blogging every day and having to find things to talk about that are even mildly interesting you know!

Day 64 - Sunday lunch.............

They seem to come around so quickly.................. Another Sunday lunch. It seems like 'only yesterday' that I was telling you all about my slow roasted lamb selling out. Today it was the beef! I have a feeling that it was more to do with the fact that one of the choices on todays menu was an Asian style 'char siu' pork and I think people were put off by it. Here's what it looked like...

If I'm being honest, perhaps it wasn't quite right for a traditional Sunday Lunch, but thats me I'm afraid. I have to try things, I cant just sit back and cook the same stuff over and over again. I have a passion for food, I don't just do it as a job. I have a creative mind when it comes to food and I will never stop trying to achieve someting different. If we all stuck to traditional recipies, the food world would be a very boring place to be. I do think that there is a time and place for traditional, but not the same thing week in week out. Having said all that, I was a little disappointed with the flavour of my pork dish! I felt it should have had a little more honey and a little less soy. These are flavours I know, but I do not use often, so I need to practice a little more! We did receive a really nice comment on our Facebook restaurant page (https://www.facebook.com/pages/Lauras-at-West-Beach-Calpe/179443228776929) from a lady called Sarah Noakes who wrote 'We came to you today without having booked on the off-chance of getting in - thank you for fitting us in and what a fantastic meal. The pork was absolutely delicious; actually, the whole meal was superb although how we managed to eat our desserts of lemon cheesecake and chocolate brownie I don't know!! Thank you VERY much, really enjoyed it and you are all wonderfully welcoming.' Maybe it wasnt that bad after all!

 It was ridiculously hot in the kitchen today, temperatures reaching 40 degrees, so a very uncomfortably sweaty day. Its only gonna get worse for the next 3 months..... It doesnt help when the gas rings and the ovens are on. All in all though, a very successful lunch (34 covers), with some very satisfied customers. It makes the day a little easier when you get nice comments.

First thing I did when I got home was get my fat arse in the pool, and 2 hours later I was still there. Did plenty of swimming and plenty of nothing! I'm off for a quick dip now as its pretty muggy tonight and it cools me down before bed. I shall bid you all good night and we shall speak again tomorrow

Day 63 - The 9th weigh in and other stuff!

So, I got on the scales this morning very much thinking that I had not had a good week. I genuinely believed that I had gained weight. Tentatively, I mounted the scales (very poetic, or kinky, which ever way you take it), and heard Heathers words......'You've stayed the same'. My initial feeling was that of relief, but after digesting the information and thinking back to all the 'rabbit food' I had nibbled on last week, I thought to myself  ' does 1 small naughty evening of wine and steak mean that the other 6 days of 'being good' mean nothing?' After feeling sorry for myself,  I then realised that it is quite possible that even if I hadnt had my weak moment, I may not have lost any weight. There are many factors to take in. Could it be that I have gained a little muscle with all the swimming and excercise I have been doing,or could it be just that the body does things that I will never quite fully understand? I'm going for the latter! I am thinking positively that I may have one of those big losses next week. I would love to hit the 17 stone something mark and although I think 5 pouinds is a tall order, you never know!

I've just read that paragraph back to myself and didnt understand it. What chance have you lot got?!!

Moving on to work..........

A pretty standard Saturday morning in the cafe....... Every one piling in at the same time and wanting full English breakfasts. Just when you think you can pop out of the kitchen for a minute and cool down, 2 more come in wanting hot food and it goes on and on until about 1pm and then goes flat. Thats usually the point at which I go upstairs to do some of the prep for Saturday evening and for Sunday Lunch. Today was no different.

Managed to get it done by about  4pm and headed off home to spend a couple of hours by the pool with Harrison until it was time to go back for the evening service. We had a booking for 2 people at 8.30 and by 8pm we were still empty. We finished up with 9, which baring in mind England were playing a friendly and the final of 'The Voice' was on, it could have been worse.

Talking of 'The Voice', I am extremely pleased that Leanne won. I think she has an amazing voice. As soon as Jazz Ellington was out, I wanted her to win. I didnt think she would as I thought the public may go for someone more like Bo, but they didnt select her.....Thats a joke by the way....... Bo select her (selecta). Even at 2.45am I'm cracking jokes! Talking of 2.45am, its time I went to bed as its early start for Sunday lunch in the morning.

day 62 - Weigh in tomorrow....And found a house!

Its Saturday tomorrow and that means a trip to the 'Beauty Box' for this weeks weigh in. Really dont feel confident this week. In fact, I think I may have gained weight. Apart from Tuesday night I have stuck rigidly to my change of habits, but I just feel heavier. I  am usually a good judge as to whether or not I have lost any weight and this week I really do feel heavier. Although disappointed, I would not be surprised if I had gained...... Watch this space! I will infrom c

On to work. A pretty standard Friday, nothing of any interest to talk about really. We managed 30 portions of fish and chips, so a little less than 'normal', but none the less, not bad. The road works are still driving us mad, but there's nothing we can do about them so I'll stop whinging! Home at 11pm tonight as well, so fairly early. Time for a swim and a blog before watching tonights episode of Eastenders!

Any of you following my house hunting saga may be pleased to know that we found somewhere today. Its a perfect size and has the outdoor space and size we wanted, oh, and a pool! Its a 2 double bedroomed 'bungalow' with an ensuite bathroom (with a bath, yipee), a brand new shower room, a large kitchen for a Spanish property with a decent amount of worktop (yipee again) and all the rooms are very large. The living room and both bedrooms have aircon, but I think we will have to sort out some internet etc.....  It has decent outside space for all the little fellas stuff and a pool! Oh and did I mention that there was a pool? ;0)

I'm off for a crispbread for my 'dinner'. Wouldnt want to eat a heavy meal the night before the weigh in now would I?!!
